Once upon a time, in December of 2011, two bartenders and a chef decided to start selling tacos and cocktails in sunny Sihanoukville, Cambodia. With the sole mission of bringing tacos to a taco-less town, as well as shaking up unique and inspired cocktails, a bar named Maybe Later was born.
Still to this day, Maybe Later remains the sole dedicated Mexican taqueria in town, as well as what locals agree is the town's premier cocktail bar. Toss in scattered amounts of unsolicited advice and staggering nonsense — and you have the perfect recipe for a fantastic night.

Cooking up a plate of Latin-American goodness in Cambodia is no small feat, but the experience of talented chefs with years of experience creating Mexican and Tex-Mex fare brings the flavors of the southwest to the Cambodian coast. Featuring staples like burritos, enchiladas, our famous fish tacos and vegetarian options, there's something delicious for everyone. We make all our sauces and salsas in-house, including our savory enchilada sauce, our fire-roasted Colorado-style green chili and our near-pain-inducing stoopid salsa.
